Toaster Pastries (Pop Tarts)

What's quick and easy and takes little time to feed your kids in the morning?  Pop Tarts!  But who wants to feed growing bellies with this??


I lose count trying to figure out how many ingredients are in these and what does "filling made with EQUAL to 10% filling" even mean?

I can do better.  Granted, even before I became somewhat obsessed with nutrition I knew these were not a healthy way to start the day and therefore would not buy them for our kids.  My reasoning was based on the fact that they are so full of sugar.  Which is true but they are also filled with much more than that.

But they could be a good food to feed my children.  So I headed to one of my favorite sites, 100 Days of Real Food, and found this little gem of a recipe.  I ended up making strawberry, grape, and apple cinnamon pop tarts from scratch.  I used natural jelly for the grape and strawberry and made my own filling for the apple cinnamon.


They ended up tasting like a cross between Pop Tarts and Toaster Strudels (another childhood favorite of mine!)  To keep them separate, I poked the holes in the shape of whatever flavor they were.  So S=Strawberry, G=Grape, and A=Apple.  I am considering buying a protein powder that can withstand heat (meaning it's bake-able) from Shaklee.  I plan to use some in this recipe in the future to make them even better for on the go breakfasts.

We put them in an air tight container and popped them in the freezer.  Now we have great toaster treats when we're in a hurry to get to my Zumba class in the morning!

Original Recipe: Whole Wheat Toaster Pastries

My Apple Cinnamon filling:

1 apple
1 tsp cinnamon
2 tbsp raw sugar
1/4 cup water

Add ingredients to a small sauce pan.  Bring to a simmer and let cook until apples are tender.  You may need to add a little extra water if the mixture is too thick.  Once apples are tender, use a potato masher to mash your apples to your desired consistency.  Makes enough filling for about 4 pop tarts.  You can double or triple the recipe depending on how many you need.
