Potato Chips

I have seen a lot of different ways of doing this on Pinterest and other sites.  This is the method that worked best for me.  I tried oven baking and they just didn't come out with the same crispness as the microwave.  I don't cook much with the microwave (just reheat stuff) but these really do turn out delicious!   I have made them several times and they are perfect.  So long store bought chips with added preservatives and fillers.


What you will need:

1-3 Potatos (Depending on how many batches you want to make)
2 tbsp olive oil
sea salt to taste

Using a mandolin, cut your potato into thin slices.  I find that the second thinnest setting (1/8 inch) on mine works best.  I tried using 1/16 thinking thinnest is best but this is not the case.  My chips just burned.  If you do not have a mandolin, just slice them as thin as you can get them trying to make them as like sized as possible.

Place the sliced potatoes in a plastic bag. I recommend doing one potato at a time as it will take a few batches and left in the bag the potatoes start to brown.  Add a tbsp of olive oil. Seal and shake making sure to cover each slice with oil.  Reserve the other tbsp of olive oil for a later batch.

Oil a large plate and line with the potato slices in a single layer.  Sprinkle with sea salt.  Microwave on high for 4 min.  Check to see how they look - they will not likely be done yet.  The first time you make them I would check them after ever 2 minutes from here on out.  You are looking for some of them to be browning.  They don't all have to be browning as they will crisp up more as they cool.  Everyone's microwave is a little different so it's hard to say exactly how long it will take.  Play with it and figure out how much time is good for yours.  Mine took 8 min and 15 sec to get to the crispness I like.

Remove from plate and place in a bowl.  Move on to the next batch.  It is a little time consuming so I like to do them while the kids are napping and I'm doing dishes or just hanging out.  They are so worth the wait!

I did try to store them overnight and they turned out a little stale tasting so I recommend eating them fresh.  I usually get them going first while I'm making sandwiches for lunch.  I like knowing there are only three ingredients and they all came fresh from my own kitchen!
