Protein Energy Balls

Protein Energy Balls are so easy to make and you can use whatever things you have on hand.  These little gems are perfect for a quick breakfast, snacking while hiking, or post workout when you need to replenish your energy!  Word the wise, these babies are NOT low in fat and are not a "diet" food.  I rarely eat anything that constitutes "diet" food anymore.  They ARE however packed full of nutrients and are a healthy way to get a punch when you need one.  They have similar ingredients to protein bars you might find at the store but they have no additives and are completely natural.  Plus, they are way cheaper!

Rateyourburn.com has an interesting post with 16 different protein/energy ball recipes to try.  As for me, I like to throw together whatever I have on hand and voila!  Energy on the go.  Perfect for pre or post workouts!

Here's how I usually make them - there isn't an exact science:

handful of mixed RAW nuts (I usually use peanuts, almonds, and cashews)
handful of dried cranberries
1 tsp chia seeds
1 tsp flax seeds
1 tbsp honey
1 heaping spoonful of soy protein powder
a few squares of at least 70% dark chocolate if you have it
enough peanut butter to make it all stick together
(you can throw in some oats too if you'd like but I don't normally)

Put all of the ingredients in a blender or food processor and grind until you get a cornmeal-ish consistency.  You can leave it chunkier if you prefer.  Once blended, add the peanut butter in until you can form balls.  Form balls just a little smaller than ping pong balls.  Enjoy!  You can store them in the refrigerator for up to a week or in the freezer for a few months (although I doubt you can leave them alone that long!)

These are some of mine that I keep in the freezer.
